In order to ensure sustainable and economic dairy-based value-added production, it is essential analyze the costs Break-Even points. The study was undertaken in Experimental Dairy Plant, National Research Institute, Karnal (Haryana) with handling capacity of ten thousand liter per day, optimize cost products manufactured dairy plant. Burfi Ice-cream are among most crucial Indian processed a plant widely consumed. Primary Secondary data were both used conduct this study. supplemented by actual observation interviewing personnel, data, i.e., milk inflow, its utilization pattern, product output, taken from different ledgers. Economic analysis necessary each component manufacturing ice cream. will keep presence competitive market, as result, consumer benefit optimum price. Therefore, calculated plant, fixed variable 24.56 75.44 percent for 34.01 65.99 cream, respectively. This shows that has surplus production 3721.69 kg 1,02,082.33 cups 100 ml output respectively, after break-even point. suggested quantity Icecream should be above recommended Point avoid losses. As seasonal product, if there fluctuation market demand, could shifted other profitable products.
